My favorite recipe for farm fresh eggs
I have a very embarrassing confession to make. There's a truth about me that sometimes alienates those I love most...I'm not a breakfast person, and I almost never want eggs. *gasp*
If you feel you cannot continue associating with someone that doesn't live for pancakes and sunny side up eggs, I understand completely. We had a good run, and I wish you luck in your future endeavors (even those breakfast-related.)
Now, for those of you still with me, rest assured that I have found some ways to enjoy this nutrient-dense food. Eggs can be prepared in a million beautifully diverse ways, but today I want to share with y'all a recipe that has made me actually come to appreciate eggs. Thanks to all our feathery friends!
Thankfully, my husband also prefers eggs around dinnertime. He'll happily eat a few sunny-side up, but he really loves frittatas too, especially because they're a great way to use up a lot of veggie odds and ends. This specific recipe is for the frittata pictured up top, but I really encourage some creativity! Have some bacon that needs to be used? Throw that in! Want to go for a meatless meal? Skip the sausage and add in whatever vegetables you have waiting for a home. The possibilities are almost endless, which is exactly what is so fun about this dish. Enjoy!
